Healthy, Easy, & Baked Crispy Parmesan Fries

We love eating these as a side with at least two meals a week. They are super easy, healthy, and taste SO good. This recipe is adapted from one of my moms old recipes and from Iowa Girl Eats. These make enough for Jeremy and I, but we are normally wanting more. It feeds 1-2 people.


You will need:

  • 1 russet potato (or whatever kind you prefer)
  • 1 tsp parsley
  • 1 tsp garlic salt
  • 1 TBsp panko crumbs (on the aisle with the bread crumbs)
  • 2 TBsp shredded parmesean cheese

Cut the potato into THIN THIN THIN slices. Place on a cookie sheet with greased aluminum foil. Pour olive oil over the slices and mix around so that it’s on all of the pieces.


Lay out so that there is only one layer of potatoes. You want them to be crispy!! Sprinkle parmesan, panko, garlic salt, and parsley over the potatoes. You don’t have to follow my amount exactly– just put as much as you want!


Bake at 400 for 10-15 minutes depending on how crispy you like them! Jeremy likes the softer ones (first picture), and I prefer the ones that are a little burnt (second picture).

Baked Crispy Parmesan Fries:

Cut up one russet potato into thin slices. Cover with olive oil and spread out on a greased cookie sheet. Sprinkle with 1 tsp garlic salt, 1 tsp of parsley, 1 TBsp panko crumbs, & 2 TBsp of shredded parmesan cheese. Bake at 400 for 10-15 minutes.
