Healthy & Easy Chicken Nuggets

These are SOOO good and healthy! They are Jeremy’s favorite meal- I make them with baked potato chips.

I found a recipe similar to this from Skinnytaste and have adapted it. Feel free to half it or double it. This should feed anywhere from 3 (guys) to 6 (girls) people. I fix it for dinner one night, and Jeremy and I have it for lunch the next day.


You will need:

  • salt and pepper to taste
  • 1/3 cup grated parmesan (in the can)
  • 1/2 cup bread crumbs (whatever flavor you want- I use plain)
  • 1/3 cup panko crumbs (in the aisle with the bread crumbs)
  • 2 TBsp olive oil
  • 3 lbs boneless skinless chicken breasts


Cut the chicken into bite sized pieces (sprinkle with salt and pepper to taste), and mix the bread crumbs, parmesan, and panko crumbs in a seperate bowl. Pour the olive oil over the chicken and mix it so that olive oil is on all the pieces.


Cover a cookie sheet with aluminum foil and spray with non stick spray. Dip each nugget into the crumb/cheese mixture then place on the cookie sheet.

**You can freeze them at this point. Just take them out of the freezer and put them in the refrigerator to thaw the morning that you want to cook them that night!


Bake at 400 for 15-25 minutes (depends on the size of your nuggets)



Easy and healthy baked chicken nuggets (feeds 3-6 and takes about 30-45 minutes): Combine 1/3 c grated parmesan, 1/3 c panko crumbs, & 1/2 c of bread crumbs in a bowl. Cut 3 lbs of chicken breasts into bite sized pieces. Season with olive oil, salt, and pepper. Dip each piece into cheese/crumb mixture and place on a greased cookie sheet. Bake at 400 for 15-25 minutes.
