Chicken Caesar Pasta

I made this meal all through college! It is so good, and pretty healthy too!

Here’s what you need:

  • 12 oz. Bowtie Pasta
  • 1-2 lb. shredded chicken (you can get a rotisserie chicken, boil split chicken breasts, or boil boneless skinless)
  • 8 oz. fresh mushrooms
  • 1 cup frozen peas
  • 1/2 cup frozen onions
  • your favorite caesar dressing (I use Ken’s Creamy Caesar) OR pesto sauce
  • 1/4 cup parmesan cheese (just to add to the top)
  • 1/2 stick of butter (4 TBsp)

Cook & drain 12 oz. bowtie pasta (this is really preference- you could do anywhere from 8-16 oz depending on how much pasta you want)

Melt butter in a large sauce pan over medium heat. Once melted, add onions and sauté for 1-2 minutes. Then add mushrooms and sauté along with onions for 4-5 minutes. Finally, add peas and sauté for about 2 minutes more minutes. Remove from heat.

Cook and shred chicken. You have several ways you can do this. 1- get a rotiserie chicken 2- boil split or boneless chicken breasts and shred 3-cook split or boneless chicken breasts in the crockpot & shred

Combine it all & add parmesan cheese (again preference on how much you want on it, if at all)

From here, again you have 2 choices. You can serve hot (everyone else’s favorite) with pesto sauce or caesar dressing. Or you can eat it cold (my favorite) with pesto or caesar dressing. Enjoy!

  1. I love Caeser salad. What a great idea to bulk it up a bit into a comforting meal. Though I’d be tempted to add some anchovies to this, but that’s just me 🙂
