Mrs. Emily’s Pasta Casserole

I have loved this recipe since I was little! One of my childhood friends moms used to make it- hence the name! πŸ™‚ Meredith and I shared many wonderful meals of this! Weren’t we cute??!

Friends012 - Version 2

This is a great meal for a big group of people, or to take to someone. It’s in an aluminum pan in the pictures because it is actually going to one of our friends who just had a baby! It’s very easy to make and delicious!

Here’s what you need:

  • 1 jar of your favorite Alfredo sauce
  • 1 lb bowtie pasta (I used penne in this b/c I didn’t have any bowtie)
  • 1 1/4 cups of shredded chicken (you can get a rotisserie chicken, or cook split chicken breasts in the crock pot with water and seasoning and then shred)
  • 2 c mozzarella cheese
  • 1/2 cup shredded parmesan cheese

Prepare and drain the pasta. Mix the pasta, white sauce, chicken, and 1 cup of mozzarella cheese. Pour into a greased 13 x 9 dish. Top with 1 cup of mozzarella cheese and then parmesan cheese.

Bake at 350 for 30 minutes. Enjoy! πŸ™‚

    I know it’s been a while since the question was asked, but I freeze this all the time and it works great! Just leave the foil on until the very end so it doesn’t scorch the cheese. πŸ™‚
