These are so incredible and healthy!!!!
They taste like fries, but they are baked.
You will need (Honestly, I usually just cover the sweet potatoes with each of the following ingredients, but I’m guestimating the amount in case you need it. My recommendation is to cover it to taste) :
- 2 sweet potatoes
- 2 TBsp olive oil
- 1/4 cup panko (it’s usually near the breadcrumbs- it’s worth it if you don’t have any!)
- 1/4 cup Fresh parmesan cheese
- Kosher salt to taste
Preheat oven to 400 or 425. Cover a cookie sheet with foil and spray with Pam.
Cut up sweet potatoes into very thin round slices. Place on cookie sheet and pour olive oil and kosher salt over them. Mix olive oil and salt so that it’s evenly covering all the sweet potatoes.
Lay them out on the cookie sheet in a single layer. Sprinkle with panko crumbs and parmesan cheese. Bake for 15-25 minutes until crispy! I recommend eating with honey mustard!
