Cowboy Dinner

This is such a fun and delicious dinner!

I found it at melskitchencafe. It is so easy and quick- I love that it’s a one dish meal!

What you need:

  • 2 pounds of ground beef
  • 1 cup of frozen corn
  • 1 can of beans
  • 1 1/2 cups of salsa
  • 1 cup of shredded cheddar cheese
  • salt and pepper to taste

For cornbread topping you will need 2 boxes of Jiffy Corn Muffin Mix (plus eggs and milk to make it). You can also use your favorite cornbread recipe- I just used Jiffy 🙂

Brown the meat. Drain then add beans, salsa, and corn.



Place in a sprayed 9 x 13 casserole dish. Sprinkle cheese over meat mixture.



Mix 2 boxes of Jiffy according to directions. Pour over meat mixture. Cook at 375 for 25-40 minutes.



Serve with a salad or green beans!
